3 stages thanks to 3 main senses (using eyes, nose, mouth).

Stage 1: Observing with eyes

Clear or opaque wine, wine coat is dazzling or dull, the color of shirt is dark or light. What color is the sugar of a wine coat? For sparkling wine or champagne, you need to observe whether the foam is high, smooth?

Stage 2: Sniff with your nose

This stage is very important. Initially, you smell the immobile wine in the glass, then shake the wine in the glass more exposed to the layer of oxygen and promote its full flavor. Putting nose into cup, sniffing to feel those flavors. If necessary, this action can be repeated. This is followed by a period of assessing the concentration or blandness of the flavor, the flavor quality being the origin of that flavor. In general, the flavors contained in alcohol are divided into odor groups:
Fruit scent: Banana, orange, lemon, grapefruit, guava, apple, peach, pear, cherry, string, fig, kiwi, pineapple, mango
Flower scent: Rose, orchid, physique, violette …
Smell of grass, moss smell: Freshly cut grass, green peppers, moss, wet straw …
Chemical smell: Sour vinegar, alcohol, strong alcohol …
Spicy smell: Pepper, paprika, curry, star anise, cinnamon …
Animal skin odor: Leather, dry or wet fur, musk, fox mink …
The smell of roasted and burnt substances: Coffee, burnt yeast, chocolate, baked bread
The smell of tree sap: Pine, rosewood, cajuput …

Stage 3: Tasting by mouth

This is the final stage, allowing the precise determination of the “wine flavor” and the harmony between the three constituent elements of wine: sour, sweet, fat, acrid. The oral tasting stage is further divided into 3 small stages:
Start tasting: Lets feel the sweet, salty, sour, acrid taste, as well as bitter or high-alcohol sensations.
Taste.
After taste: Analyze the flavor to see if there is harmony or discomfort and the time it stays in the mouth.
